- 400 g 14 oz bow-tie pasta
- 4 tomatoes
- 2 tablespoons capers
- 1 red onion
- Twenty pitted black olives
- 1 teaspoon mustard
- 1 teaspoon vinegar
- 3 tablespoons 'olive oil
- Parsley
- Salt and pepper.
Boil lightly salted water and cook pasta for ten minutes. Drain the pasta and rinse it under cold water. Pour into a bowl.
Wash, seed and cut the tomatoes into cubes. Peel and finely chop the onion. Add the onion and tomatoes in the bowl.
Add the capers and black olives. In a bowl, mix the mustard with the vinegar and oil. Salt and pepper and pour over pasta. Mix.
Cool and refrigerate one hour before serving. Sprinkle with parsley before serving.
